Tofu Banana Pudding

Ingredients

  • 16 ounces silken tofu*
  • 3 ripe bananas (mash 2, slice 1)
  • 2 Tablespoons sugar
  • 1 teaspoon vanilla

Directions

  1. Wash hands with soap and water.
  2. Combine tofu, 2 mashed bananas, sugar and vanilla. Blend until smooth.
  3. Pour into a serving bowl or dishes.
  4. Cover and refrigerate until chilled. Top with sliced banana just before serving.
  5. Refrigerate leftovers within 2 hours.

Notes:

  • *Soft or silken tofu has a creamy texture that blends easily.
